One pot chicken and rice, a family favorite that's easy to make. Season chicken thighs, sear, then sauté aromatics. Add rice, broth, and chicken, then simmer until cooked. Top with lime, Parmesan, and chives.
Season bone-in chicken thighs to your liking. Sear in a skillet for about 5 minutes each side, then remove from heat. Add 1 tbsp butter, 1/4 cup minced onion, and 3 minced garlic cloves to the skillet and sauté until softened. Add in 1 1/2 cups washed rice and toast for a few minutes. Add 2 cups of chicken broth, season to taste, and then add in the chicken thighs. Cover and cook on low for about 30 minutes. (Optional but highly recommend: broil chicken thighs in the oven once finished!). We top everything with lime juice and grated Parmesan! I also love to add some chipped chives.
